Camp Cooking Interview With Meredith Fuller of Simple Recipes

•What inspired you to start simplerecipes.net?
My husband and I decided to develop simplerecipes.net while we were still dating. We loved to cook together and especially enjoyed trying new recipes. We wanted to log our recipes from our date nights and share with the online community. It's been so much fun!

•What's your favorite meal to prepare?
One of my favorite meals to prepare is a lobster boil with corn on the cob and a nice rice pilaf! Sounds complicated to someone who hasn't prepared it, but it's super simple.

•What camping recipes for kids would you recommend?
One of my favorite kids camping recipes requires adult supervision of course, but a Nice batch of boiled peanuts with salted water! It's a fun recipe that the whole family can enjoy (as long as there aren't peanut allergies).

•For vegetarian campers, could you suggest some vegetarian meals/recipes?
My favorite vegetarian recipe for campers requires a specific piece of camping cookware, the grilled cheese iron! like the one in the picture I've attached. You can use any thin slice of bread, some butter, and cheese plus spinach for the stuffing or a dessert version with peanut butter and jelly stuffing.

•What's one food you can't live without?
Bread and cheese and chocolate. I can't pick one...

•What are some camping dessert recipes you would recommend?
Well, who doesn't love a good s'more, right? But for something a little different while camping, I like to do simple recipes with few ingredients like sliced apple with cinnamon and sugar sprinkled on top.

•If you could learn how to cook any meal from any chef, what meal would you want to learn how to cook?
I think Julia Child would be involved! I'd love for her to come back to life and teach me how to make cream puffs!

•In 10 years do you see yourself still cooking and blogging?
I'll definitely be cooking my little heart out and most likely with an online presence.

Thanks Meredith for the interview. Please visit her blog @ Simple Recipes
